High in the mountains of Palestina, Huila, at 2,000 metres above sea level, Betania Farm is part of something much larger than a single producer. As one of 117 smallholder farms in a tightly knit network across southern Huila, it sits within a community built on shared values: respect for the land, chemical-free farming, and a deep commitment to preserving the traditions that make this region's coffee so distinctive. Shared infrastructure including a cupping laboratory, professional drying stations, and centralized warehouses ensures every lot is traceable, consistent, and held to the highest standard.

This particular lot belongs to Maria Eugenia, a producer within the Tierra Diversidad network whose coffee came to the world's attention through the mentorship and support of Don Linarco Rodriguez, known to everyone as Don Lino. A farmer of deep knowledge and quiet generosity, Don Lino has spent years helping younger and emerging growers in the community find their footing, refine their craft, and get their coffee to market. Maria Eugenia's lot is a direct result of that collaboration, and a testament to what this community makes possible when experience and ambition come together.

The SL28 varietal she grows is processed through the Yellow Honey method, a beautifully considered approach that begins with hand-selecting only the ripest cherries. After depulping, a meaningful layer of mucilage is left on the parchment before a short, carefully monitored fermentation of 12 to 18 hours. The coffee then dries slowly on raised beds for up to 20 days, creating the signature honeyed sweetness and syrupy texture the process is known for. A final resting period allows the flavors to fully settle and stabilize before milling.

What ends up in the cup is warm, generous, and deeply satisfying. Pomegranate leads the way with its vibrant fruit-forward acidity, followed by the rich sweetness of panela, with a silky medium body that lingers beautifully.
